Nether portals for pigman farms
My question is, How do you know where to place a portal in the overworld relative to the nether such that pigmen will enter and come out into your mob farm? Also, does the portal in the nether get protection?

Or to put it more generally, how do the portals of pigmen farms work?

Pigmen do not actually cross through the portals, Nether portals spawn them, so you do not need to worry about portal placement. Nether portals created in the Overworld on CV do not generate another portal in the nether, and vice versa, (to prevent griefing,) and player-made portals do not take you to the nether or back. They are useful for making mob grinders and looking cool, but not really anything else. :)

Also to make what is called a 'cell' you make a square tube with the obsidian at 23 x 23 with 23 to 25 back. You can back these side by side too with a single wall between them, making a double cell. Then if you leave a gap of 9 or 11 between the obsidian and make another double cell across from it, your grinder will be at its optimal size. They are great for mending/repairing your tools/armour and collecting flesh and gold for trading with Clerics.
There is also other ways to set out this 4 cell arrangement too. Some do a 4 sided, that's on all sides of a square, and some do theirs in a step formation going up.
Here is what I mean on the map.
The basic layout is like this https://www.cubeville.org/map/#/2245/64/.../Cubeville
The 4 sided https://www.cubeville.org/map/#/-2689/64.../Cubeville
its hard to see but this is the stepped one https://www.cubeville.org/map/#/2364/64/.../Cubeville
You can also double stack them too like this https://www.cubeville.org/map/#/2713/64/.../Cubeville
or just do the spaced out version with water below and trapdoors between the portals https://www.cubeville.org/map/#/1923/64/.../Cubeville

All in all there are many ways in which you can design this above and below ground. But one thing you have to remember is to build it at least 100 blocks from other entities/animals/villagers/other mob grinders that you want to breed/spawn in, to help it work to capacity.
I hope this helps you design yours.

Oooh I never thought that the portals just spawn them... oof. Thank you for the info!

Aah thank you for the designs! I'll probably use one of them.
